This Apple Vegetable Curry is one of the most requested recipes.
Most of my friends really love this curry and often they ask me how to make it so they can make it for their own friends and families.
It is easy to make and it's a delicious dish that is loved by both vegetarians and non-vegetarians alike.
Apple Vegetable Curry Ingredients
Apple 1,
Potatoe 1,
Carrot 1,
Onion 1,
Zucchini 1,
*Mushrooms (optional),
Butter or cooking oil, water,
*Curry mix cubes
*I used S & B, Golden Curry mix, which can be found at any Asian grocery store.
*Since I didn't have mushrooms, you can add them if you like.
First, dice the vegetables. (Onion, potato, carrot, and zucchini)
Next, add a small amount of butter (or cooking oil) to a pot and stir-fry the onion, potato, and carrot for 3-4 minutes.
(Optional: I often add a little bit of crushed garlic, but you can omit it if you prefer.)
Next, add 1 cup of water to the pot and put a lid on it.
Leave it to boil over medium heat.
Then, cut the curry mix cubes into smaller pieces to ensure they dissolve well.
You can add them directly to the pot, but I prefer mixing them with a small amount of hot water first to prevent clumping.
Add the curry mixture to the pot along with 2-3 cups of water.
Keep stirring it and add the zucchini, apple, and mushrooms.
Continue stirring it for about 5 minutes.
The curry should be ready by then!
Serve the curry with rice, and if you want to eat as the Koreans do, enjoy it with some Kimchi on the side!
